Pumpkin Cupcakes with Orange Cream Cheese Frosting

Ingredients
Cupcakes:
  • Paper cupcake liners (12 liners)
  • 2 cups all purpose flour
  • 1 tsp. baking soda
  • 1 tsp. ground cinnamon
  • ½ tsp. ground ginger
  • ¼ tsp. ground nutmeg
  • ¼ tsp. salt
  • ½ cup butter, softened
  • 1 cup light brown sugar
  • 2 large eggs
  • 1 cup pumpkin puree
Frosting:
  • 4 ounces cold cream cheese
  • 3 tbsp. butter, softened
  • 1 tbsp. orange juice concentrate
  • ½ tsp. vanilla extract
  • 1 ½ cups confectioners’ sugar
  • Food coloring (optional)
Instructions
Cupcakes:
  1. Preheat oven to 350 degrees.
  2. Line cupcake pan with cupcake liners.
  3. Sift together flour, baking soda, cinnamon, ginger, nutmeg and salt.
  4. In a separate bowl, beat the butter and sugar together until light and fluffy.
  5. Beat in the eggs and then the pumpkin.
  6. On low speed, beat in the dry ingredients just until blended.
  7. Transfer batter to the prepared cupcake pan.
  8. Bake until a tester inserted into a cupcake comes out clean, about 25 – 30 minutes.
  9. Cool.
Frosting:
  1. In a medium bowl with an electric mixer, beat the cream cheese and butter just until smooth.
  2. Beat in the orange juice concentrate and vanilla.
  3. Gradually beat in the confectioners’ sugar.
  4. Tint with desired food coloring.
  5. Frost and decorate cupcakes as desired.
  6. Enjoy!
