Easy Apple Cake

Ingredients
  • 1 pkg. yellow cake mix
  • 1 pkg. (3.4 oz.) Vanilla Flavor Instant Pudding
  • 4 eggs
  • ⅔ cup water
  • ½ cup oil
  • 1 tsp. ground cinnamon
  • ¼ tsp. freshly ground nutmeg
  • ½ cup plus 2 tbsp. sour cream, divided
  • 1 lb. apples (about 3 apples), peeled, coarsely chopped (Granny Smith work well)
  • ¾ cup powdered sugar
  • 1 tsp. water or milk
Instructions
  1. Heat oven to 350ºF. Grease and flour a 12 cup fluted Bundt pan.
  2. Beat first 7 ingredients and ½ cup sour cream in large bowl with mixer until blended.
  3. Stir in apples; pour into greased and floured pan.
  4. Bake 1 hour to 1 hour 5 min. or until toothpick inserted near center comes out clean.
  5. Cool cake in pan 15 min.
  6. Loosen cake from sides of pan with knife. Invert cake onto wire rack; gently remove pan. Cool cake completely.
  7. Whisk powdered sugar, remaining sour cream and 1 tsp. water until blended; drizzle over cake.
  8. Let stand until glaze is firm.
  9. Serve and enjoy!
