By itself watermelon is just delightful and the kids LOVE it – however, sometimes you need to pretty it up a bit. We were recently invited to a potluck barbecue and me wanting to appear a little more refined than a simple sliced watermelon might imply, I tossed together one of our favorite summertime dishes – Watermelon, Feta and Basil salad.
This salad is SO good. It’s a bit sweet, a bit savory and a whole lot of fresh. It’s a nice contrast to the normal calorie laden BBQ fair, so it always gets gobbled up fast! The other plus? Not only is it delicious, it’s super simple and easy to prepare. All of that qualifies this to be a staple recipe in my book! So what’s the first step in this super easy, tasty dish? Going to Save Mart of course! I ran in quickly after work delighted to find that the Seedless, Whole Watermelons I needed were on sale for just $3.99! While I was there I snagged a few more essentials and was in and out in a jiff – in fact you can view a Goolge+ album of my Save Mart Fresh Finds shopping trip HERE. Anytime I can get in and out of a store quickly is a major plus in my book – especially when I can also score such great deals.
This dish is exceedingly simple, in fact it only requires three main ingredients that you simply chop and mix together.
Ingredients:
- 3 cups cubed seedless watermelon
- 1 cup traditional Feta cheese crumbles
- 2 tablespoons fresh chopped basil
Simple mix all of the above ingredients together and et voila! You have a fine summer salad that’s fresh, light, sweet and savory – all of the best flavors that summer has to offer. If you like a bit more finish to yours salads, you can top this off with a a dash of balsamic vinaigrette. We prefer it undressed, but you might like a little more savory flavor on yours. One thing I do recommend is that you wait to mix this salad just prior to serving, as the watermelon tends to break down if done too far in advance.
