I think we can all agree, there’s just nothing like Mom’s home cookin’. It just tastes better, doesn’t it? For that reason I’ve asked my Mom to submit some of her favorite recipes for me to share with y’all each Monday. Let’s get cooking in the kitchen with Mom!
It’s Spring, and in Northern California that means asparagus is in season! We’ve been eating a ton of it and having fun incorporating it in to different dishes, including this one we’re talking about today. This dish is light, tasty and super easy…
Asparagus, Bacon & Three Cheese Pizza
Ingredients:
- 1 ball of pizza dough (homemade recipe here)
- 2 Tbsp. olive oil (you can use garlic or basil flavored, if you like)
- Minced garlic, optional, to taste
- ½ tsp. freshly ground pepper
- 1 cup shredded Fontina cheese
- ¼ cup shredded Asiago cheese
- ¼ cup crumbled goat cheese
- 5 slices bacon, cooked crisp and crumbled
- 1 cup fresh asparagus, trimmed and cut into 1 to 2” pieces
Place a pizza stone on the middle rack of your oven and pre-heat to 500 degrees. While doing so, blanch your asparagus pieces in simmering water for 1-3 minutes, depending on thickness of your spears. Drain well and set aside.
Next stretch your pizza dough out to fit your pizza stone (I stretch it out on parchment paper to make it easier to place on the hot pizza stone). Remove the hot pizza stone from the oven carefully; flip your pizza dough out onto the stone and place back in the hot oven for 7 minutes. Remove the pizza crust from the oven, brush with the olive oil and minced garlic, if using.
Sprinkle pizza with pepper. Spread the asparagus pieces across the dough and top with the three cheeses. Lastly, sprinkle the bacon pieces across the top. Return the pizza to the oven and bake for an additional 7 minutes, or until the crust is lightly charred and the cheese is bubbling.
Slice, serve and enjoy!
