
I think we can all agree, there’s just nothing like Mom’s home cookin’. It just tastes better, doesn’t it? For that reason I’ve asked my Mom to submit some of her favorite recipes for me to share with y’all each Monday. Let’s get cooking in the kitchen with Mom!
Do you ever have those days where you want something sweet, but don’t want to go out to buy the extra ingredients? I sure do! That’s why I love this week’s recipe so much. It’s super easy to whip up with ingredients you most likely already have on hand and it’s quick and easy. Don’t let the simplicity fool yah though – these are very decadent!
Ingredients:
- 2 1/4 cups all purpose flour
- 1 cup butter (2 sticks), softened (do not use margarine)
- 1 cup sugar
- 1 cup raspberry preserves (blackberry, boysenberry, blueberry or strawberry preserves would also work too!)
Preheat oven to 350 degrees. Line 8 or 9” square pan with foil and grease foil. In medium bowl, whisk flour and sugar until blended. In separate bowl, with mixer at medium speed, beat butter until fluffy. Reduce speed to low and gradually beat in flour mixture until crumbly.
Reserve 2 cups of flour mixture. Press remaining mixture into bottom of pan, distributing evenly in pan. Spread raspberry preserves over mixture to ½ inch of pan. Crumble reserved mixture evenly over preserves.
Bake for 40 to 50 minutes or until lightly browned.
Let cool before serving.
