I think we can all agree, there’s just nothing like Mom’s home cookin’. It just tastes better, doesn’t it? For that reason I’ve asked my Mom to submit some of her favorite recipes for me to share with y’all each Monday. Let’s get cooking in the kitchen with Mom!
This week’s recipe is one my Mom and I have poached off of my Aunt Lisa, who is not only a rocket scientist, she’s a mean cook as well! She and my Uncle, who insisted we call this Lizza Pizza, cooked this up for us on a recent visit and it was so good we had to do up one for ourselves when we got home. It’s just how I like my recipes – simple, quick and delicious!
Ingredients:
- 1 Pillsbury Classic or Thin Crust pizza dough
- ½ to ¾ cup Alfredo sauce (we used Classico’s 4 Cheese Alfredo Sauce)
- ½ pound thick cut bacon, diced into 1 inch dice and cooked crisp
- Handful fresh spinach leaves
- 4 oz. grated Italian cheese blend (we used Sargento’s 6 cheese blend)
- 1 tsp. chopped fresh rosemary (optional) (do not used dried as it will be too strong flavor wise)
- Parchment paper
Preheat oven to temperature called for on pizza dough package. Line a large rectangular cookie/baking sheet with parchment paper. Roll out your pizza dough of choice to a rectangle on the parchment paper. Spread the Alfredo sauce to within ½ inch of border of dough. Cover sauce with the diced, cooked bacon pieces. Sprinkle with fresh spinach leaves. Sprinkle with Italian cheese blend. If you like, sprinkle the pizza with the chopped fresh rosemary. Bake pizza according to the package directions.
