
I think we can all agree, there’s just nothing like Mom’s home cookin’. It just tastes better, doesn’t it? For that reason I’ve asked my Mom to submit some of her favorite recipes for me to share with y’all each Monday. Let’s get cooking in the kitchen with Mom!
The Super Bowl is this Sunday and you know what that means – great food! You thought I was going to say football, didn’t you? Well folks, my favorite part of the Super Bowl are all of the yummy appetizers and entrees that inevitably get served up, and this week’s recipe for Zesty Feista Sloppy Joes is a go-to favorite. What I love so much about this recipe is that (1) it is homemade and (2) it’s got a TON of zesty flavor. You can serve these as sliders, as we’ve done here, or you can serve the meat as full size sandwiches, over baked potatoes or even use it to make nachso! Yum! I guarantee one taste of this and you’ll never go back to the canned standard 😉
Ingredients:
- Olive oil
- 2 pounds ground beef or ground turkey
- 1 yellow onion, diced
- 1 7 ¾ oz. can El Pato tomato sauce (Mexican tomato sauce – yellow can – usually found in the Hispanic food section of the grocery store)
- 1 6 oz. can tomato paste
- ½ tsp. salt
- ½ tsp. ground black pepper
- ½ tsp. Lawry’s seasoned salt
- ½ tsp. granulated garlic
- 3 tbsp. chili powder
- 1 – 2 tbsp. cumin
- 1 tsp. dried oregano
- 2 tsp. granulated sugar
- Water, as needed
Heat a large frying pan over medium high heat. Coat with olive oil. Add the onions and ground beef or turkey. Saute for 5 to 7 minutes until cooked through, breaking up the meat. If you have used a high fat ground beef make sure you may drain off as much fat as you deem appropriate. Then, add the can of El Pato sauce and tomato paste. Now add all of the seasonings. Add a bit of water to make sure the liquid is at the level of the cooked meat at all times. Simmer the mixture for 15 minutes or so and then taste. You can adjust your seasonings to your liking by adding more of what you think is needed. If you want the mixture hotter, you might add a few chili flakes.
We like to serve this on either potato buns or the King’s Hawaiian rolls. You can use regular size rolls or slider rolls.
