I think we can all agree, there’s just nothing like Mom’s home cookin’. It just tastes better, doesn’t it? For that reason I’ve asked my Mom to submit some of her favorite recipes for me to share with y’all each Monday. Let’s get cooking in the kitchen with Mom
Calling all Irish Cream fans! This fudge is your kind of treat – it’s super smooth, sweet and very tasty. We made this as a gift for a family friend last weekend and I’ve had trouble keeping my hands out of the left overs – it is SO good! Fair warning though – this recipe does include alcohol, which does NOT get cooked off, so keep this out of the hands of the kiddos.
IRISH CREAM FUDGE
- 3 cups semisweet chocolate chips (I use Nestle)
- 1 cup white chocolate chips (I use Ghirardelli)
- ¼ cup butter, room temperature (very important that it’s room temperature)
- 3 cups confectioners’ sugar
- 1 cup Irish cream liqueur
- 1 ½ cups chopped walnuts, toasted lightly in the oven
Butter an 8” X 8” pan.
In the top of a double boiler, melt the 3 cups of semisweet chocolate chips. Once you have these melted, take the double boiler off the heat, stir in the white chocolate chips and stir until thoroughly melted. Then add the room temperature butter and stir, stir, stir to incorporate it into the chocolate. If the chocolate looks like it’s starting to seize up, don’t worry. Now pour in 1/3 of the Irish cream and stir to mix that in. Then add ½ of the confectioners’ sugar and stir, stir, stir. Add another 1/3 of the Irish cream and stir to mix well. Then add the last ½ of the confectioners’ sugar and stir that in. Finally, add the final 1/3 of the Irish cream and stir well until the mixture is smooth. Now stir in the nuts.
Place the mixture in the prepared pan and lay a sheet of plastic wrap over the top. Press wrap down and smooth the top of the fudge. Refrigerate until firm, 1 to 2 hours at least. You can leave this fudge in the refrigerator, but let it sit out for a while before attempting to cut into pieces.
(If a little of the butter exudes out on top of the fudge, no worries. Simply turn the fudge pieces upside down after cutting. It will not affect the taste at all. Also, it’s easier to remove a large piece of the fudge and then cut into smaller pieces rather than attempting to cut small pieces and remove them from the pan.)
