I think we can all agree, there’s just nothing like Mom’s home cookin’. It just tastes better, doesn’t it? For that reason I’ve asked my Mom to submit some of her favorite recipes for me to share with y’all each Monday. Let’s get cooking in the kitchen with Mom!
This week’s Cherry Chocolate Chip Cookie recipe is a spin on two classic that are staples in our household – chocolate chip and oatmeal raisin. They’re a little more adult – not overly sweet with a hint of tartness from the cherries. Many say that if you are red wine fans, then this is the cookie for you 🙂
Ingredients:
- 3 cups all purpose flour
- 4 tsp. baking soda
- 1 tsp. salt
- 1 ½ cups granulated sugar
- 1 ½ cups packed brown sugar
- 1 ½ cups butter , 3 sticks, softened
- 4 large eggs
- 4 tsp. vanilla
- 6 cups old-fashioned oats, uncooked
- 2 cups dried tart cherries
- 2 cups semi-sweet chocolate chips
Preheat oven to 350 degrees. Grease two large cookie sheets. In small bowl, with wire whisk, stir flour, baking soda and salt until blended.
In large bowl, with mixer at medium speed, beat granulated sugar, brown sugar and butter until creamy, occasionally scraping bowl with rubber spatula. Beat in eggs, one at a time, beating well after each addition. Beat in vanilla. Reduce speed to low and gradually beat in flour mixture just until blended, occasionally scraping bowl.
With wooden spoon (if you use anything with a flexible handle, it will be difficult to stir dough as it is quite stiff), stir in oats, dried cherries and chocolate chips until well combined.
Set bowl in refrigerator for 15 minutes (cookies spread less when dough is cold; if you like thinner, crisper cookies, skip this step). Drop dough by rounded tablespoons, 2 inches apart, onto two prepared cookie sheets. Bake cookies until tops are golden, 12 to 14 minutes, rotating cookie sheets between upper and lower racks halfway through baking. Transfer cookies to wire racks to cool.
Let pans cool off completely before placing the next set of cookies. I also like to store the cookie dough in the refrigerator between batches.
