I think we can all agree, there’s just nothing like Mom’s home cookin’. It just tastes better, doesn’t it? For that reason I’ve asked my Mom to submit some of her favorite recipes for me to share with y’all each Monday. Let’s get cooking in the kitchen with Mom!
***Before we get to this week’s recipe, Mom has decided to share her new found love of container gardening. What a great way to stay frugal and organic without breaking the bank!
This past Christmas, I received a gift that was truly inspiring: A Topsy-Turvy tomato planter (you can find them on Amazon for cheap right now!). Now, I know you’re probably thinking that using the term “inspiring” to describe this planter is an over-exaggeration. But the darn thing really works
After seeing how well the planter worked, I decided to attempt my hand at growing other vegetables in containers. Right now my containers have basil (at least $2.99 a bunch in the stores and it never lasts more than a day before going totally limp), tarragon, rosemary, pineapple mint, parsley and cilantro growing in it.
It is so great to be able to go out and cut fresh herbs, which are so much more tasty that the ones you find in the grocery stores. Granted, I spent about $20 on the pot, soil and herbs, but in the long run it will save me much more than I spent.
Next week I’ll show you the rest of the container garden. We’ve got squash, tomatoes, peppers and cucumbers growing. And now we’re talking about converting one side of the back yard into a series of raised beds for growing more vegetables. So, see, “inspiring” wasn’t such an exaggeration after all!

Homemade Guacamole
Ingredients:
- 1 ripe avocado
- 1 – 2 tbsp. chopped cilantro
- 1 – 2 tbsp. finely chopped red onion
- ½ jalapeno, finely chopped
- Juice of ½ lime
- Garlic powder, to taste
- Sea salt, to taste
Slice your avocado in half, remove the pit and scoop out the flesh into a bowl. Mash the avocado until chunky. Add your cilantro, chopped red onion, chopped jalapeno (remove the seeds if you don’t want much heat; leave seeds in if you like your avocado a little hotter) and juice from ½ lime. Mix well. Mash if you like your consistency smoother or leave chunky, your choice. Add a pinch of garlic powder and sea salt to taste. If you would like a little more lime flavor, add additional juice carefully.
