I think we can all agree, there’s just nothing like Mom’s home cookin’. It just tastes better, doesn’t it? In a veiled attempt to get more home cooked meals I’ve asked my Mom to submit some of her favorite recipes for me to share with y’all each Monday. Let’s get cooking in the kitchen with Mom!
This week’s recipe was inspired by Valentine’s Day. We wanted something special, yet festive so we scoured Pinterest looking for a frugal, fun recipe that would be delicious and easy. We settled on Sugar Bean Baker’s Red Velvet Sandwich Cookies filled with Cream Cheese Icing.
They are more delicious than they sound and not-so-surprisingly addicting!
Ingredients:
1/2 stick butter (1/4 cup, no substitutions!)
1/4 teaspoon Vanilla extract
1 egg
4oz. softened cream cheese
18oz. Red Velvet cake mix
Powdered sugar
Begin by beating together the butter, vanilla, egg and cream cheese until light and fluffy.
Then add in the cake mix and blend until dough forms. It should be nice and thick. Cover and refrigerate for at least 30 minutes. In the mean time, preheat your oven to 350 degrees.
After the dough has had a chance to set up, form small balls and roll them in the powdered sugar. Place on an ungreased cookie sheet and bake for 10 minutes.
Take the cookies out of the oven and lightly tamp them down with a glass – you want ’em flat if you plan to turn them in to sandwich cookies 🙂 After you’ve squished ’em down, put them back in the oven for two minutes. Once done remove them from the cookie sheet and let cool on a baking rack.
While they’re cooling, head on over to make your frosting. I halved the original recipe as I didn’t want a bunch of leftover frosting:
Ingredients:
1/2 stick butter (1/4 cup), softened
4oz softened cream cheese
1/2 teaspoon vanilla
1 1/2 cups powdered sugar
Beat the butter, cream cheese and vanilla together. Gradually add the powdered sugar until blended.
Once you’ve got your cookies cooled and your frosting ready, you’re ready to make your sandwiches!
I highly suggest wearing spandex pants while eating these – they are HIGHLY addicting and you’ll be surprised how quickly a dozen disappear…so I’ve heard 😉
