I think we can all agree, there’s just nothing like Mom’s home cookin’. It just tastes better, doesn’t it? In a veiled attempt to get more home cooked meals I’ve asked my Mom to submit some of her favorite recipes for me to share with y’all each Monday. Let’s get cooking in the kitchen with Mom!
This recipe is a family favorite. I LOVE IT! We make this for holiday brunches and to be honest, nobody ever guesses what’s in it. It’s cheesy and savory and oh so scrumptious!
Ingredients:
- 1 pie shell (I prefer Pillsbury’s which you can find coupons for here)
- 1 medium head cauliflower, any variety, cored and chopped into similar sized chunks, preferably no larger than 1” square
- 1 ¼ tsp salt
- 2 tbsp unsalted butter
- 2 cups chopped onion
- 1 large egg
- 1 large egg yolk
- ¾ cup heavy cream
- ¾ cup finely grated Parmesan cheese
Partially bake the pie shell (15 minutes at 400 degrees should do it). Set aside on a rack to cool. Bring two quarts of water to boil in large pot. Add 1 tsp of salt and the chopped cauliflower. Return to boil and boil for about 4 minutes. Drain in a colander and let cool.
Preheat over to 375 degrees. While the cauliflower is cooking, melt butter in medium skillet over moderate heat. Add onions and sauté, stirring occasionally, for 5 minutes. Scrape the onions onto a plate and let cool.
In medium bowl, lightly beat the egg, egg yolk, cream and remaining ¼ tsp salt. Stir in all but 2 tbsp of the Parmesan cheese. To assemble, sprinkle the remaining 2 tbsp of Parmesan cheese in the bottom of the crust. Spread the onions over the cheese, then arrange the cauliflower pieces in the shell. (Don’t overfill the shell; you should only have one layer of cauliflower pieces.)
Slowly pour the custard over the top, then bake on the center rack for 45 to 50 minutes, until the custard is set and the top is golden and slightly puffy.
Remove the pan and set on a cooling rack for 5 to 10 minutes.
We like to serve this with a spring greens salad with vinaigrette, which helps to cut the richness of the quiche.
