This past weekend, my Mom, Grandmother and I were traveling so we decided to share our favorite easy protein filled breakfast that is quick, easy and super delicious. Not only is it easy to prepare at home, it’s also easy to do in a hotel room if you’ve got a microwave.
This is also a great recipe as it helps me overcome one of my biggest obstacles to getting healthier physically, as well as financially – eating out. Anything that tastes better and is cheaper than a drive through is a winner in my book 🙂
Ingredients:
- 1 English muffin (we use whole wheat)
- 1 slice American cheese
- 1 piece Canadian bacon
- 1 egg
- Butter
Crack the egg into a small bowl or ramekin with a teaspoon of butter. Mix well with a fork. Put in the microwave for 1 minute at 80% power (each microwave is different, so cooking time and power may vary. 80% works best with Mom’s microwave, while mine is fine at 100% power). While the egg is cooking drop the English muffin in the toaster. Once the egg is done, heat the Canadian bacon in the microwave for 10 – 15 seconds while you’re assembling the rest of the sandwich. Once the English muffin is toasted, butter lightly and place the egg, Canadian bacon and cheese on the muffin to create your sandwich.
There are many variations to this easy meal – you can use bacon or ham instead of Canadian bacon, add green onions to your eggs before cooking and switch up the type of cheese (we like American because it melts the best). No matter which way you make it, this meal is easily customizable, quick, tasty, and all for about 1/3 the price of what the fast food chains charge.
