I think we can all agree, there’s just nothing like Mom’s home cookin’. It just tastes better, doesn’t it? In a veiled attempt to get more home cooked meals (okay, I admit, it’s a pretty thin veil, lol) I’ve asked my Mom to submit some of her favorite recipes for me to share with y’all each Monday. Let’s get cooking in the kitchen with Mom!
This week’s recipe is another one good for this chilly (pun intended, ha!) weather we’ve got. Not only is this chili easy on the waistline, it’s easy on the wallet too. This recipe was tweaked from one we found in this cook book, which we’ve had for years. Eat it by itself, or throw it on a baked potato – either way this chili is hearty, healthy and oh so yummy 🙂
Ingredients (serves 4 to 6):
- 1lb ground turkey
- 1/4 cup vegetable oil
- 3 large onions, coarsely chopped
- 2-3 garlic cloves, minced
- 1/4 cup chili powder
- 1 tablespoon plus 1 teaspoon ground cumin
- 1 1/2 teaspoon ground coriander
- 1/2 teaspoon dried oregano, crumbled
- Salt and ground pepper
- (1) 14 1/2oz can Mexican-style stewed tomatoes
- (1) 14 1/2oz can beef broth
- (1) can black beans, rinsed
- 1 1/2 cups water
- 1 teaspoon Tabasco (optional)
(*A note about the spices – if you don’t have these on hand already, I always suggest heading to store such as Winco and buying them in the bulk section. That way you buy just as much as you need.)
In a dutch oven, heat the oil over medium-high heat. Once hot, cook the ground turkey until browned.
While your cookin’ the turkey, go ahead and chop up your onions and mince your garlic.
Once your turkey is done, remove it from your dutch oven and toss in your onions and garlic to the remaining oil. Cook for three to four minutes, until the onions have softened. Go ahead and now add the chili powder, cumin, coriander, oregano, 1/2 teaspoon salt and 1/2 teaspoon pepper. Cook for about 30 seconds, stirring constantly, or until the spices are very fragrant.
Return the turkey to the pot and add the stewed tomatoes, black beans, broth, water, Tabasco (optional), and bring to a boil. Reduce the heat to low and simmer, partially covered, for about 1 1/2 hours.
And that’s it! I like to serve it with a healthy dose of shredded cheese and some low-fat sour cream. Yum 🙂
