
I think we can all agree, there’s just nothing like Mom’s home cookin’. It just tastes better, doesn’t it? For that reason I’ve asked my Mom to submit some of her favorite recipes for me to share with y’all each Monday. Let’s get cooking in the kitchen with Mom!
There’s nothing like this delicious, buttery French Pear Cake to get your morning started! It’s got a great golden brown crunch on the outside, and a mellow, sweet pear inside. It’s perfect as a brunch-time dessert or with your morning cup of joe – either way you go, you’re guaranteed to love it!
Instructions:
- 3 – 4 small ripe pears, peeled and cut into ½ inch cubes
- 1 cup plus 2 tbsp. butter, at room temperature
- Zest of 1 lemon
- 1 ¼ cup sugar
- ¼ tsp. vanilla extract
- 4 eggs, at room temperature
- 2 cups plus 1 ½ tbsp. flour
- ½ tsp. baking powder
- Pinch of salt
- Powdered sugar
Preheat the oven to 350 degrees. Grease a 9 ½ inch spring form pan. In a stand mixer, beat the butter and sugar together until very fluffy and light colored. Mix in the eggs slowly, one egg at a time. Add vanilla and lemon zest. In another bowl, sift together flour, salt and baking powder. Add the flour mixture slowly to the egg mixture. Don’t over mix. Pour half the butter into the spring form pan. Place the pieces of pear over the batter. Spread the rest of the batter in the pan. Bake for 50 to 60 minutes, or until a toothpick inserted in the center of the cake comes out clean. Set pan on a cooling rack until cool enough to handle. Remove sides of spring form pan and place cake on a cake stand or plate. When you’re ready to serve, dust with the powdered sugar.
