
I think we can all agree, there’s just nothing like Mom’s home cookin’. It just tastes better, doesn’t it? For that reason I’ve asked my Mom to submit some of her favorite recipes for me to share with y’all each Monday. Let’s get cooking in the kitchen with Mom!
- 1 cup pumpkin (about 1/2 of a 15 ounce can)
- 2 large eggs
- 1/2 cup packed brown sugar
- 3 tablespoons vegetable oil
- 1 tablespoon molasses
- 1/2 teaspoon salt
- 1 1/2 teaspoons pumpkin pie spice
- 1/2 cup milk
- 1 1/2 cups Unbleached All-Purpose or Whole Wheat Flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
In a large bowl, whisk together the pumpkin, eggs, brown sugar, oil, molasses, salt, spices, and milk. Scrape down the sides and bottom of the bowl. Whisk the flour, baking powder, and baking soda together. Add all at once to the wet ingredients and mix until all ingredients are well combined. Drop about 3 tablespoons (or a scant quarter cup) of the batter into the greased wells of a prepared muffin pan (I like to use cupcake liners, which I then spray with cooking spray – it makes the liners peel right off without taking half the muffin with it). Bake for 18 to 20 minutes. Remove pan to a cooling rack and, if you can do so without burning your fingers, tip the muffins on their sides so the bottoms don’t steam while the muffins cool.
