I think we can all agree, there’s just nothing like Mom’s home cookin’. It just tastes better, doesn’t it? For that reason I’ve asked my Mom to submit some of her favorite recipes for me to share with y’all each Monday. Let’s get cooking in the kitchen with Mom!
Valentine’s Day is Saturday! Have you decided on a treat for your sweety? If not, consider this amazing Mixed Berry Almond Bark! This sweet treat is great for a couple of reasons – 1. hello chocolate!, 2. it’s super easy to make, and 3. did I mention the chocolate? It’s also great if you’re looking to make some sweets for a crowd because you can make big trays of it all at once, break it up and you’re good to go. Enjoy!
- 1 pound finely chopped white chocolate
- 1 lb. semi-sweet or bittersweet chocolate chips
- 1 cup mixed dried berries (I use a combination of blueberries, cranberries and cherries)
- 1 cup chopped roasted, salted almonds
- Line a baking sheet with foil.
- Pour a couple inches of water into the bottom half of the double boiler and heat over medium-low to just below a simmer. Put the semi-sweet chocolate in the top half of the double boiler and set over the hot water. Slowly melt the chocolate, stirring with a heat-resistant rubber spatula. As the chocolate melts, check the temperature periodically using a candy thermometer to make sure it stays between 82 and 86 degrees F. If it starts to rise above this temperature, quickly transfer the chocolate to the bowl on reserve and stir briskly to reduce heat.
- Remove bowl from over the hot water just before all the chocolate melts. Stir vigorously until the chocolate melts completely.
- In the meantime, you can melt the white chocolate in the microwave at half power 30 seconds at a time, stirring in between, until the white chocolate is melted.
- Quickly stir the ⅓ of the fruit and nuts into each chocolate.
- Spread chocolate mixtures out on the prepared baking sheet so it's about ½-inch thick, alternating two rows of the semi-sweet and white chocolate side by side.
- Take a knife and swirl the white and semi-sweet chocolate together.
- Take the remaining nuts and fruits and sprinkle across the top, lightly pressing down to make sure the bits and pieces adhere to the chocolate.
- Set bark aside at room temperature to harden.
- You can also refrigerate it for about 30 minutes to speed the process.
- Break into angled pieces.
- Store in an airtight container at room temperature.
