I think we can all agree, there’s just nothing like Mom’s home cookin’. It just tastes better, doesn’t it? For that reason I’ve asked my Mom to submit some of her favorite recipes for me to share with y’all each Monday. Let’s get cooking in the kitchen with Mom!
It’s officially Summer time folks! Memorial Day is here and the girls are out of school as of Friday. They’ve been hinting and prodding at wanting to bring something special to their classroom as an end-of-the-year celebration snack, so I thought we’d whip up some Rice Krispies Treats – but not just any Rice Krispies Treats, these are Pink Lemonade Rice Krispies Treats. They’re a little jazzier than the traditional recipe, but just as easy, tasty and are void of items most likely to trigger common food allergies so these are always my go-to classroom treat. I hope you’ll love them as much as the girls and I do!
- 6 cups Rice Krispies Cereal
- 3 tbsp Butter
- 10.5 oz Marshmallows
- Red Food Coloring (optional)
- 1 packet Pink Lemonade Kool-Aid Mix
- ¼ cup Pink Candy Melting Chips
- ¼ cup White Candy Melting Chips
- In a medium to large saucepan, melt the butter over low heat.
- Add the marshmallows and stir until completely melted.
- Stir in Kool-Aid until well mixed.
- Optionally, stir in enough food coloring to make the marshmallows pink.
- Remove from heat.
- Add the Rice Crispies cereal and stir until cereal is well coated.
- Using butter or cooking spray, prepare a 9 x 9 pan.
- Butter a your hands or use wax paper to press the mixture firmly into the pan.
- Allow to cool.
- Cut into bars.
- Heat pink candy chips in small Bowl by microwaving for 30 seconds stirring and repeating until melted. Allow to cool for 2-3 minutes.
- Transfer chocolate to small plastic bag and clip very tiny piece of corner to use for piping.
- Pipe diagonal lines on each bar.
- Repeat process with white candy chips.
- Enjoy!
