I think we can all agree, there’s just nothing like Mom’s home cookin’. It just tastes better, doesn’t it? For that reason I’ve asked my Mom to submit some of her favorite recipes for me to share with y’all each Monday. Let’s get cooking in the kitchen with Mom!
Apples, apples, apples! We’re going crazy for apples! They’re so good this time of year, and so economical so we’ve been making great use of them. One super easy way to throw together a sweet, appley treat is this Easy Apple Cake recipe that Mom whipped up. It makes use of a boxed cake mix and a handful of other ingredients you probably have on hand already – toss ’em together with your apples and voila! You’ve got yourself a tasty, moist oh so yummy Apple Cake that’s been a big hit in our family. Enjoy!
- 1 pkg. yellow cake mix
- 1 pkg. (3.4 oz.) Vanilla Flavor Instant Pudding
- 4 eggs
- ⅔ cup water
- ½ cup oil
- 1 tsp. ground cinnamon
- ¼ tsp. freshly ground nutmeg
- ½ cup plus 2 tbsp. sour cream, divided
- 1 lb. apples (about 3 apples), peeled, coarsely chopped (Granny Smith work well)
- ¾ cup powdered sugar
- 1 tsp. water or milk
- Heat oven to 350ºF. Grease and flour a 12 cup fluted Bundt pan.
- Beat first 7 ingredients and ½ cup sour cream in large bowl with mixer until blended.
- Stir in apples; pour into greased and floured pan.
- Bake 1 hour to 1 hour 5 min. or until toothpick inserted near center comes out clean.
- Cool cake in pan 15 min.
- Loosen cake from sides of pan with knife. Invert cake onto wire rack; gently remove pan. Cool cake completely.
- Whisk powdered sugar, remaining sour cream and 1 tsp. water until blended; drizzle over cake.
- Let stand until glaze is firm.
- Serve and enjoy!
