
I think we can all agree, there’s just nothing like Mom’s home cookin’. It just tastes better, doesn’t it? For that reason I’ve asked my Mom to submit some of her favorite recipes for me to share with y’all each Monday. Let’s get cooking in the kitchen with Mom!
Halloween is just around the corner, and in our house it can’t come soon enough! The girls have already scoped out costumes and I am consuming all things pumpkin. Knowing how badly we want to kick off October with some Halloween fun, Mom made the girls some Pumpkin Cupcakes with Orange Cream Cheese Frosting and brought them over. They were SO good! I never before would have imagined pumpkin and orange going together, but by golly these were tasty! The cinnamon and spice plays really well off the orange in the frosting, and they are full of flavor. These are a definite hit if you’re looking for a cupcake creation that’s a little different 🙂
- Paper cupcake liners (12 liners)
- 2 cups all purpose flour
- 1 tsp. baking soda
- 1 tsp. ground cinnamon
- ½ tsp. ground ginger
- ¼ tsp. ground nutmeg
- ¼ tsp. salt
- ½ cup butter, softened
- 1 cup light brown sugar
- 2 large eggs
- 1 cup pumpkin puree
- 4 ounces cold cream cheese
- 3 tbsp. butter, softened
- 1 tbsp. orange juice concentrate
- ½ tsp. vanilla extract
- 1 ½ cups confectioners’ sugar
- Food coloring (optional)
- Preheat oven to 350 degrees.
- Line cupcake pan with cupcake liners.
- Sift together flour, baking soda, cinnamon, ginger, nutmeg and salt.
- In a separate bowl, beat the butter and sugar together until light and fluffy.
- Beat in the eggs and then the pumpkin.
- On low speed, beat in the dry ingredients just until blended.
- Transfer batter to the prepared cupcake pan.
- Bake until a tester inserted into a cupcake comes out clean, about 25 – 30 minutes.
- Cool.
- In a medium bowl with an electric mixer, beat the cream cheese and butter just until smooth.
- Beat in the orange juice concentrate and vanilla.
- Gradually beat in the confectioners’ sugar.
- Tint with desired food coloring.
- Frost and decorate cupcakes as desired.
- Enjoy!
