Raley’s Chef’s Menu – One Pan. 10 Minutes. Dinner is served!
It’s Monday! And guess what – I already feel like this week has me beat. Between work, the blog, all the crazy coupon deals this week and the kids and Coach D my time seems to have evaporated. And I feel like dinner is where I always try and make up for lost time, which means I end up taking shortcuts that probably aren’t the healthiest choices, and are at best just okay tasting. Hello chicken nuggets! But, I’m happy to say that now have a new go to plan for busy nights like tonight – and it is MUCH healthier, and way tastier.
Meet the new Raley’s Chef’s Menu meals!
The new Raley’s Chef’s Menu meals are gourmet inspired dishes from the minds of local area award-winning chefs that can be cooked at home in 10 minutes or less. They include a variety of dishes centered around certain proteins – chicken, fish, shrimp, and steak. It’s a really simple process – simply head to the meat department, pick you protein, your sauce, your side and your veggies and you’re good to go. You can mix and match as you like to make your own meals, or do like I did and take the Chefs’ suggestion. I chose to go with their Chicken Marsala recipe with Mashed Potatoes and steamed veggies. And you know what? It was great!
For this particular recipe you simply cooked up your seasoned chicken in a bit of olive oil until it was done; then you add the sauce and simmer for two minutes. While you protein is cooking, you can toss the sides into the microwave and heat according to the package directions. When all is said and done, you’ll have spent 10 minutes on a dinner that tastes like you spent at least an hour!
I’m a big fan of chicken marsala, so my taste expectations for this dish were pretty high. And I have to say – it didn’t disappoint! The sauce was nice and flavorful without being overwhelmingly tangy or sweet. It had the perfect consistency too – it was just thick enough to make a great sauce, without being thick and glopy. As for the sides – the mashed potatoes were my favorite! If you’ve never had Raley’s Mashed Potatoes, you’re missing out. They’re super creamy, buttery and make a great side to any meal – and I just love that I can grab a pack, heat it up and have a complete side ready to add to my dinner in just minutes.
Portion size wise, I’d say this meal fed two healthy sized adults. The package says 3 – 4, but I guess we’re big eaters because Coach D and I cleaned our plates of this entire meal – that’s how good it was 😉

All in all I can say we were very happy with our Raley’s Chef’s Menu experience. We’re excited to try all of the new dishes and will definitely be adding them to our weekly line-up of meals for nights when we’re super busy.
